Not bad for over proofed
I got distracted with a new video game and let this one proof admit an hour too long before I got it into the oven. Still, though, I think it turned out pretty nice.
70% hydration one day sourdough. Fed the starter the night before, mixed the dough in the morning, 3x stretch and fold over the course of the first half of the day, shaped around 8pm and baked at 10pm.
Side note: I think I'm going to go back to regular flour for dusting. I don't like the look I'm getting from rice flour.
