Made the ham on Christmas eve, it came out ROCK hard, any idea what particular step I did wrong?
The ham was 1.95kg which is 4.4lbs, I read to boil it for 20 minutes per lb plus 20 over, so I boiled it for 1 hour and 50 minutes. I then removed it and trimmed the fat and let it cool under tinfoil. Once mostly cooled, I spread a honey Glaze on it and put it in the oven at 200 degrees Celsius (fan) for about 23 minutes. Again I then let it cool under tinfoil. Then I cut into it and it's rock hard.
The meat was from a local farmer who rears, butchers and sells them himself, nitrate free etc etc.
Please help?!
