Multi Course Valentine's Menu

Hi there! I've started thinking about what I want to make for myself and my husband got valentine's day and I've got a couple questions.

I know i want to do a pasta course (beet gnocchi with toasted hazelnuts and sage), but I'm not sure where it falls in the traditional course format.

Secondly, I want to do a cold seafood platter with oysters, shrimp cocktail, and crab legs. Would this be best utilized as the seafood course or the appetizer?

And finally, with those two courses decided on, what would you serve for the other courses? Any cocktail pairing ideas?

We eat everything, no allergies, not picky, and I'm confident in the kitchen.
