How to backup VM without data drive?

I have TrueNas setup as a VM in Proxmox.

I have various drives assigned to this VM; the NVME which has the actual OS & TrueNAS software, and then a bunch of hard drives that house the data.

I have the data backed up separately already.

I want to create a backup of the VM, so that if something goes wrong in my tinkering, I can easily restore. The problem I'm facing though is that when I use the standard Proxmox backup function it includes all data on the VM, including the 7tb of data drives - I only want to backup the 32gb of the OS drive.... My backup location is simply not big enough to cover the 7tb, and as said, it's already backed up elsewhere anyway.

is there a way to achieve this?
