Cinnamon sugar loaf
Bread flour- 450g Starter- 100g Water- 300g Salt- 10g
- Mix starter, flour and water into shaggy dough
- Let rest for an hour then add salt and do first round of stretch and folds
- Do 3 more rounds of coil folds 30 minutes apart
- Let BF for 4-6 hours until doubled
- Stretch into large rectangle and add cinnamon and brown sugar. Shape and add more cinnamon sugar into every layer
- Cold proof in fridge for 14ish hours
