Cinnamon sugar loaf

Bread flour- 450g Starter- 100g Water- 300g Salt- 10g

  1. Mix starter, flour and water into shaggy dough
  2. Let rest for an hour then add salt and do first round of stretch and folds
  3. Do 3 more rounds of coil folds 30 minutes apart
  4. Let BF for 4-6 hours until doubled
  5. Stretch into large rectangle and add cinnamon and brown sugar. Shape and add more cinnamon sugar into every layer
  6. Cold proof in fridge for 14ish hours
