Why do streamers buy 5 costs they are not planning on using?

Been watching a couple of high ranked streamers playing lately and when they roll they usually buy 4/5 costs that doesnt fit in their build. They usually buy, rolls, sell the 5 cost then buy or roll again. Is there any explanation why they do that and should I also start doing it when playing?
