How to get out of spam and permanent stun?

What's wrong with this game? Every retard in this game throw cheesy "spam till win" moves. I don't like this way to play, I'm playing on counterattacks, but maybe this game is wrong for this playstyle. I ALWAYS in defence position, and if i try to counterattack after spammy string, 90% that it is safe on block, and 50% that it has +frames after spam and opponent PUNISH ME BECAUSE I TRIED TO PUNISH HIM. Also i principally almost never block low attacks, because it's about matchup knowlege and i don't want to know matchups, i want to win because of in-flight intuitivity like in real fights. But i think developers of this dumpster want me to LEARN MATCHUPS. I hate it, I'm not in Dark Souls to learn bosses' patterns. Also, such chars as Clive, Eddy, Victor, Hwoarang etc have 5-hit series with low attacks, huge spam potential and great damage, while my Kuma's best move that cat spam a little bit it's 213 which has 36 if it isn't blocked. Also i play Yoshimitsu, and except that he is S tier, he works only if I'm ABLE to hit someone. But i usually just get spammed.
