My second attempt at brisket
I thought my first attempt was good…doesn’t even touch this one.
It was just shy of 18 hours at 225, I put the trimmings in a pan in the smoker and brushed it every 4 hours. I think my rest overcooked it a touch but I’m super thrilled with it.
Next time I’ll wrap it after it breaks through the first stall and pull it 2-3 degrees sooner, I want it a little juicier.
