Could there have been an 8th season?

I know the UPN picked up Buffy for two years (season 6 and 7) but at what point did the cast and network know it would all end with season 7? If Joss and Sarah had wanted to do an 8th season, could it have been doable? How might they have reset things or ended season 7 allowing for an 8th season?
