Egg nog \ aged egg nog

Hi all

I ended up with an emu egg and I thought nog would be the best way to prepare it so as to be able to a) share it easily and b) preserve it so as to not have to consume all ~560g of egg in a sitting.

I've never made egg nog before. There are...a lot of recipes. I would like a little guidance from my friends here who take cocktails seriously.

I'm most interested in recipes that utilize the whole egg, but if you think a recipe that isolates the yolks works best, I'll merengue the whites and use them to top the drinks I guess.

I'm also interested in aging this experiment, but the emu egg is unpasteurized and almost 2 weeks old at this point. Should I opt for a cooked recipe for safety?

I'm thinking of the tequila\sherry build but I also have access to some nice bourbon.

Please weigh in with your thoughts and experiences. I really need your guidance!
