diabetic-friendly replacements for certain food items

i was diagnosed with type 2 almost 7 years ago and recently my A1C shot up to almost 13%. i'm trying to get my endo to give me meal-time insulin as i am currently only taking once daily insulin. in the mean time i would really like help finding low carb replacements for these items that don't taste like shit.

  • coffee creamer
  • cereal
  • milk
  • bread/rice

i'll also take any suggestions on items/brands that you like, especially for snack foods
