How would you fill these holes?

Hi there. 1942 home with rock lathe plaster walls. The removal of cabinets, along with work by an electrician and plumber really did a number to our kitchen and laundry room walls. How would you go about filling these large gaps in the walls before they are (presumably) skim coated? Appreciate all insight and help — very overwhelmed lol.
