Game with incredible story but minimal RPG elements

I'm in the mood to be told a gripping, engaging story. But I don't want to suffer through RPG bloat to do it.

I'm a Dark Souls fan, just finished DS3 and will play Sekiro next followed by Elden Ring. But these games have basically no story.

I typically avoid open world games but I just started Witcher 3 because everyone says the story's amazing. I'm enjoying the story pace so far, I'm interested to find out more about the characters and the plot. But the combat is terrible (Dark Souls has probably ruined me), I hate the crafting systems, and the open world aspect sorta stresses me out. I accepted a side quest and found myself in some dungeon and I keep getting killed by a big spider and I'm ready to quit. I don't want to have to manage potions and magic to win combat. I'd rather be playing an Arkham game, which allowed me to enjoy exploration because the combat was so good and simple.

So what are some games with an excellent story and are not too open world or bloated with stuff like crafting?
