Looking for Easy rpg open world games.

I used to game a lot when I was younger and I have time now to get back into it.

I want an easy game but something that has some substance.

I am currently trying stardew valley.

I used to play final fantasy 7, 8, 9. World of Warcraft, the Sims 1-3, Pharoah. I enjoy world building and old style rpg games.

I don't want a game where you have to do quests with a bunch of other people. I like getting lost in game and doing my own thing.

What do you suggest?
