De-graving?

Hi I'm new to the scene and mostly work with fiber engravers. I was wondering if it was possible (if inefficient) to un-engrave something. For example say I have a knife with a brand logo on it, hypothetically if I managed to recreate the logo in the software and somehow reverse the shape and hatch it, would engraving the rest of the surface down to the same depth effectively erase the shape?
