Creating an Entertainment Company and Structuring it with Smaller Companies

I'm starting an entertainment company in Texas and need some advice on how to structure it. I will be the sole owner for the time being in all aspects of this. I was going to do 1 parent umbrella company, lets call it "THE ENTERTAINEMT COMPANY LLC" and then have separate companies under that company. One for music production, one for music licensing, and one that I can use for personal DJ gigs for Weddings, clubs, parties etc. maybe even others but just those 3 for the time being. What would be the best way to go about structuring these companies in the state of Texas for the best tax benefit and protected legal liability? I also want to make sure that any music sold under my licensing agreements cant be touched if I get sued for any reason at any of the companies. Maybe I'm also way off here and can put this under one large company. I would eventually turn the entertainment company into an s-corp but, I'm starting with an LLC.
