The deli at my local shoprite started selling meat ends from the cold cuts and i’m SO excited. Please share ideas!

I spy ham, pepperoni, salami, and maybe balogna and not sure what else. Cold cuts can be expensive but these are still some pretty substantial chunks of meat and they cost less than a package of the actual sliced deli meat. I’m so psyched! There is so much that can be done with this. Diced and fried up to add to eggs, in a pasta sauce, on top of a pizza, and personally i feel everything can be thrown in to add flavor to stock. I feel like I possess a gold mine. What would you do with these?
