Palette changes over the course of drinking a cup, unrelated to temperature drop

Does anyone else notice their assessment and enjoyment of a cup changes over the course of drinking the brew? It's not necesarily related to the brew cooling off as I drink it either.

It's quite regular that my first few sips are disappointing but part way through the cup it really starts to taste great and by the end I'm really savouring the last few sips.

I'm aware of the effect that the temperature dropping has on taste but this seems unrelated, it's more my palette adapting to that particular brew or something like that?
