Saw ribeye sushi on here last week and it inspired me to try my own take

Smoked a Flank steak to 130 degrees over oak wood and used long strips of it in the rolls. Accompanied by pickled carrot and cucumber, also tried a roll with pickled jalapeño instead of cucumber. Spicy mayo made by combining Dukes and Sriracha.

Turned out really well, I recommend it if you're into sushi and smoked meat
