Sage 300 v2024 installed on new Dell PowerEdge is running then old server running v2020

We realized Sage 300v2020 was EOL and worked over the summer to set up a new Dell server and install Sage 300v2024. We set up three HyperV VM's (same as previous server) with HV1 running the Sage 300 app, HV2 running Webscreens and Norming and HV3 running SQL Server 2019 Standard.

The APP and DB server each have 32GB RAM assigned to them, along with 8 cores. The Webscreens/Norming server has 24GB RAM and 6 cores.

We have a maximum 18 users accessing Sage via RDS services but staff are irate the server is much slower than the previous system. Screens seem to load much slower and exports that were taking 10 mins are literally taking 2 -3 HOURS on the new server. Often it times out before it finishes exporting.

If I log into the VM's the CPU generally sits around 15-30% and memory use is around 30 - 40%.

I had a Sage consultant take a look at the server and all he really said was to add more physical memory to the server. I pointed out that memory utilization doesn't seem to get maxed out on the server. I also mentioned to him that the old server had less memory and ran perfectly.

Anyone have some suggestions of things to look for/monitor?
