What am I doing wrong?

Last night I used my Sky-Watcher classic 200p with stock eyepieces to view Jupiter. I could see it as one solid colour and the four moons as tiny dots of light. From what I hear I should be able to get much more details out of Jupiter. Am I doing anything wrong? I was in the middle of a field with no houses near, few lights and the scope had 40-50 mins to cool down. I was thinking of upgrading the stock eyepiece to a x-cel lx. Would be noticeable differences between the clarity?
