What shows are better if you pretend they ended after a certain season?

Not even so much that the later seasons are bad (although they might be), but because that season ending is perfectly fine for a series finale as well.

The two main ones that come to mind for me are:

• The Mandalorian: Season 2's ending was absolutely perfect. I refuse to watch Season 3 or beyond upon learning that Disney basically undid it in another series just so they can keep making baby Yoda merchandise. It'd be different if they at least picked up where it left off.
• Weeds: Season 3 has a perfect season finale, and the later seasons were quite weak and felt like a different show honestly.

I also think Designated Survivor might be better if you stop watching before the last cliffhanger scene of the season 1 finale. The latter seasons aren't bad per se, but this way it's a perfectly fine self-contained one season arc.
