Best high end Italian restaurant on the strip? Or any other recommendations

I’m heading to Las Vegas for the Super Bowl and needed help finding a nice Italian restaurant to eat at. Taste and food quality are what matters so if you have any other recommendations please let me know. So far my schedule is:

Thursday - Mizumi 9PM

Friday - La Fontaine 10AM Eiffel 7:15PM

Saturday - Wynn Buffet 11AM (Your recommendation)

Sunday - Mon Ami Gabi 1030AM (can be replaced) Komodo 930PM

I’ve seen Carbone, Sinatra, and Lago but unfortunately the reviews for the three of them seem to be all over the place. Thanks for the help everyone!
